Malay Brinjal Curry (Kari Terung)

Ingredients: (Serves 4-6)

5 pieces Brinjals - Sliced thickly

4 Shallots - sliced

2 Cloves Garlic - sliced

2 tbsp Curry Powder - blended with 2 tbsp Water

2 cups Think Coconut Milk

4 cups thin Coconut Milk

1 Spring Curry Leaves

3 pieces Asam Gelugur

Salt to taste

3 tbsp Oil

Method:

1. Heat oil and fry shallots and garlic until fragrant.

2. Add in curry powder and fry until fragrant, making sure it does not burn.

3. Add in the thin coconut milk, asam gelugur and curry leaves. Season to taste and bring to boil.

4. Add in the brinjals and boil until almost tender.

5. Add in thick coconut milk and bring to boil.

6. Serve hot with plain boiled rice.
