Ingredients: (Serves 6-8) 1 whole Chicken 12 Red Chilies 8 Chili Padi or Green Small Chillies 6 Shallots 4 cloves Garlic 3 stalk Lemon Grass 4 cm piece Ginger 4 cm piece fresh turmeric 3 turmeric leaves 6 Lime leaves 4 Tomatoes 3 tbsp Oil Salt to taste Method: 1. Wash and cut the whole chicken into small pieces. 2. Grind all seasoning and spices ingredients finely. 3. Fry the grounded ingredients with some oil until fragrant. 4. Add in half cup of water and chicken pieces and cover up the pot, set to boil. 5. Shredded the lime and turmeric leaves and put inside, add in some salt. 6. Once the chicken is tender, add in tomatoes to cook for another 5-10 minutes before serve. |
