Malay Chicken in Black Sauce (Ayam Masak Kicap)

Ingredients: (Serves 6-8)

1 whole Chicken

8 Shallots

5 cloves Garlic

4 cm piece Ginger

4 Red Chillies

4 tbsp Thick Soy Sauce

2 Large Onion

1 Lime

3 tsp Turmeric powder

Salt to taste

Method:

1. Wash and cut the chicken into small bite-sized pieces. Rug with salt and turmeric powder.

2. Heat a pan with some oil, fry the chicken pieces until crispy.

3. Pound shallots, ginger, and garlic together.

4. Sliced red chillies into lengthwise.

5. Sliced the onion into thick rings.

6. Fry the pounded ingredients with 3 tbsp oil until fragrant.

7. Pour in the soy sauce and chicken pieces and stir well.

8. Add in chillies sliced and onion rings. Squeeze the lime juice on top before dishing out.

9. Add in half cup of water into the sauce and set to boil to have more gravy. Add in the chicken pieces when the gravy is boiling. Add in salt if the sauce is not enough salty.
