Ingredients: (Serves 6-8) 1 whole Chicken 12 fresh Red Chillies 1 tbsp Shrimp Paste 2 Eggs 4 Candlenuts 2 Lime Leaves 4 Shallots 2 Cloves Garlic 2 cup Coconut Milk 1 tsp Salt 2 tsp Sugar Method: 1. Clean and cut the chicken into halves. Wash and drain well. 2. Rub the chicken with salt. Roast the chicken in oven when it is half cooked remove from oven. 3. Making the gravy. Grind all ingredients except lime leaves. Mix the ground ingredients with coconut milk in a heated saucepan. Boil the gravy and get it thicken. 4. Place the chicken on a plate ad pour the hot gravy on top and serve. |
