Malay Chicken in Thick Red Sauce (Ayam Masak Merah)

Ingredients: (Serves 4-6)

1000 gram Chicken Drumsticks

8 Shallots

4 cm piece Ginger - pounded

8 cloves Garlic - slice 5

3 cm piece Ginger - sliced

8 Almonds - blanched and skinned

10 tbsp Curry Powder

1 medium can of Tomato Puree

1 cup evaporated Milk

4 tbsp Corn Oil

Salt and Sugar to taste

Method:

1. Wash and skinned the chicken drumsticks. Put the drumsticks into a heated pan with water. Add in sliced shallots, ginger, and garlic. Cook the drumstick until tender.

2. Pound the remaining ingredients and mix with curry powder. Blend with 4 tbsp water, stir and mix well.

3. Heat up a pan with some oil to fry cinnamon and cloves. Add in curry powder mixture and tomato puree. Fry all ingredient until fragrant.

4. Pour the fried ingredient on to chicken drumsticks mixture. Add in tomato slice and cook until the drumstick is fully cooked.

5. Add in milk, sugar and salt. Simmer until the gravy thicken and serve.
