Malay Chicken in Tomato Sauce (Ayam Masak Tomato)

Ingredients: (Serves 6-8)

1 whole Chicken

25 Dried Red Chillies

8 Cloves Garlic

3 Large Onions

3 Tomatoes

1 cup Tomato Sauce

1 tbsp Sugar

8 cm piece Ginger

1 star anise

3 cm piece cinnamon stick

half cup Oil

2 cup Coconut Milk or Skinny Milk

3 cup Green Peas

4 Cloves

3 tsp Turmeric Powder

Salt to taste

Method:

1. Wash and cut the chicken into bite-sized pieces. Drain the mix salt and turmeric powder well.

2. Heat up a pan and deep fry the chicken pieces until crispy.

3. Pound dried chillies, shallots and ginger coarsely.

4. Pour in 3 tbs oil into a pan and heat up. Fry the pound ingredients, ginger, shallots, cloves and star anise.

5. Put in coconut milk or skinny milk to boil.

6. Add in cinnamon, tomato sauce, sugar and salt. Stir constantly.

7. Add in fried chicken and simmer for 10 minutes.

8. Add in sliced onions, green peas and tomatoes.

9. Stir the chicken and all other ingredients well in the gravy.

10.Serve hot.
