Malay Chicken Rendang in Coconut Milk (Ayam Rendang Santang)

Ingredients: (Serves 6-8)

1 whole Chicken

8 cm piece Ginger

4 Red Chillies

8 Shallots

1 tbs Shrimp Paste

3 cups Coconut Milk

4 stalk Lemon Grass

5 Carambola

Half tbsp Sugar

Half cup Oil

7 cloves Garlic

Salt to taste

Method:

1. Wash, skinned and cut the chicken into bite-sized pieces.

2. Heat up a pan with some oil, fry the shallots and chillies until turn golden color.

3. Add in shrimp paste.

4. Put in chicken pieces, lemon grass, 2 cup of water and coconut milk. Set to boil.

5. When the chicken is almost done, add in carambola, sugar and continue boiling.

6. Lower the frame and simmer until the chicken is soft and tender with the oil separates. Serve while hot.
