Ingredients: (Serves 6-8) 1 whole Chicken 14 cup Coconut Milk 3 tbsp Chilli Paste 10 cm piece Galangal 6 Screwpine Leaves 5 Lime Leaves 5 Turmeric Leaves 25 Shallots 8 clove Garlic 10 cm piece Ginger 2 tsp Salt Method: 1. Pounded shallots, garlic, and ginger together. 2. Wash and cut the chicken into small pieces. 3. Mix around the chilli paste with pounded ingredients. 4. Heat a pan with some oil, put the chicken pieces, mixture of chilli paste and ingredients, coconut milk and the rest of the ingredients and cook under low fire until the gravy gets thickens and the chicken is tender. 5. Add in the salt and to taste. |
