Malay Chicken Sambal (Sambal Ayam)

Ingredients: (Serves 6-8)

1 whole Chicken

12 Dried Red & Green Chillies

12 Shallots

8 clove Garlic

5 cm piece Ginger

3 cm piece Galangal

1.5 tbsp Flour

2 piece Tamarind

Salt and Pepper

1 cup of Oil

Method:

1. Wash and cut the chicken into 8 pieces. Rub with the flour to get rid of the chicken smell. Set it aside for 15 minutes, then wash and drain it.

2. Pound ginger, garlic, galangal into halves.

3. Rub the chicken with pounded ingredients and put to season for 30 minutes.

4. Heat up the pan and pour in the cup of oil and boil it. Once it is boiled, put in the chicken pieces and deep fry until golden brown in color.

5. Pound shallots, chillies, galangal, garlic, ginger together finely.

6. Use some of the deep fry oil to fry the pounded ingredients until fragrant.

7. Add in tamarind and salt to taste.

8. Pour in 1 cup of water to set to boil. Stir continuously and add in chicken pieces and mix evenly the gravy and chicken. Simmer for 10-15 minutes until chicken is tender.

9. Serve with fragrant rice.
