Malay Chicken Soto (Soto Ayam)

Ingredients: (Serves 6-8)

1 whole Chicken

2 Large Onion

1.2 Liter Water

3 tsp Salt

3 tsp Minced Ginger

4 tbsp Oil

4 Hard Boiled Eggs

1 cup Bean Sprouts

2 cup Shallots sliced

2 Lemon

Method:

1. Sliced hard-boiled egg, sliced thinly the shallots and scalded the bean sprouts.

2. Put in chicken, onion, salt and water into a pot, cover up and put to boil for 1.5 hours with top covered, until the chicken is tender.

3. Take out the chicken, strain and add ginger. Cut the chicken into thin strips.

4. Fry the onion with oil until golden brown in color. Add in been sprouts and stir with lower heat for 3-5 minutes.

5. Serve by arranging the chicken, eggs and vegetables nicely on the plate and pour the soup on to the ingredients.

6. Go along well with potato cakes, chopped chilies and thick soy sauce.
