Malay Spiced Chicken with Rice (Nasi Biryani Ayam) |

Ingredients: (Serves 4-6) 1 whole Chicken around 1 kg 2 clove Garlic 6 cm Piece Ginger 2 Red Chillies 1 tbsp Poppy Seeds 15 pieces Cashew Nuts 8 pieces Almonds 4 tbsp Ghee 4 Cloves 6 cm Cinnamon Stick 1 cup Shallots sliced 1 tsp Curry powder 4 cup Coconut Milk 500 gram Long grain Rice 3 tsp Salt Method: 1. Cut chicken into small pieces. 2. Grind garlic, poppy seeds, cashew nuts, almonds, ginger and chillies. 3. Fry cloves, cinnamon, shallots. Put in chicken pieces, 1 tsp salt, ground ingredients and curry powder. Stir well all ingredients, mix thoroughly, cook with covered for 15 minutes. 4. Cook the washed rice with coconut milk. Add in a dash salt. 5. Once the coconut milk is been absorbed into rice, make a hole in the middle of the rice, put in chicken mixture. Cover up and continue to cook for 15-30 minutes with low fire, then serve. |
