Malay Compressed Rice Cake (Nasi Impit)

Ingredients: (Serves 4-6)

2 cup of Fragrant Rice

2 screwpine leaves (pandan leaves)

4 cup of Water

A dash of Salt

Method:

1. Wash the rice and cook with screwpine leaves. Add in some salt.

2. Stir to break up the grains.

3. Remove the cooked rice to a tray.

4. Cover the rice with a muslin cloth and press on it with heavy object. Set aside for 4-5 hours.

5. Cut the rice into small cube shapes and serve with Satay sauce or beef or chicken floss.
