Malay Crab Curry (Kari Ketam)

Ingredients: (Serves 4-6)

1 kilogram Crabs (4-6 pieces)

8 Shallots

6 Clove Garlic

4 tbsp Fish Curry Powder

2 stalks Curry Leaves

400 gram Grated Coconut

Salt and Seasoning

Oil for cooking

Method:

1. Wash, brush the crab, rinse again and set aside.

2. Sliced shallots and garlic.

3. Mix the curry powder with water to get a thick paste.

4. Fry the sliced shallots and garlic in a pan with some oil until fragant.

5. Squeeze 2 cup of milk from the coconut.

6. Add in 1 cup of coconut milk, curry powder paste, fragrant spice and boil it.

7. Add in the crabs. salt, curry leaves and let it stew for 15 minutes.

8. When the crabs are nearly cooked, pour in another cup of coconut milk and let it boil under low fire.

9. See if the crabs turned reddish, it means it is well cooked. Serve with rice.
