Malay Styled Cucumber Pickle (Acar Timun)

Ingredients: (Serves 6-8)

3 pcs Cucumber

2 pc Carrot

2 pc Red Chili

1 pc Large Onion

2 tbsp Salt

6 dried Chilies

6 Shallots

6 Cloves Garlic

2 centimeter Piece Ginger

4 pcs Candlenuts

1 cup Dried Shrimps

1 cup Oil

Half tsp Mustard Seeds

Half tsp Turmeric Powder

3 Quarter cup Vinegar

3.5 tbsp Sugar

Method:

1. Cut cucumbers and carrot into 2 cm strips. Cut the red chili into 1cm strips and the large onion into 1cm wedges.

2. Sprinkle salt over the cut vegetables and let them stand for at least 2 hours.

3. When the vegetables are limp, wash away the salt and spread them on a clean tea towel in a cool place to dry.

4. Grind chillies, shallots, garlic, ginger and candlenuts. Pound in the dried shrimps.

5. Fry mustard seeds with oil for half minute before adding in the ground ingredients and turmeric powder. Fry for another 5 minutes.

6. When the oil separates, add in the dried shrimps and continue cooking for another 3 minutes before adding in the vinegar and sugar.

7. Cook slowly until the mixture is fairy thick. Add in more salt and sugar if necessary.

8. Stir in the prepared vegetables and toss quickly to mix well. When the vegetables are well mixed with the spices, remove the pan from the heat.

9. Cool slightly before storing in clean, dry jars.
