Malay Fish Curry (Kari Ikan)

Ingredients: (Serves 4-6)

5 pieces Mackerel

3 Tomatoes

4 Ladies' Fingers

5 Shallots

3 clove Garlic

2 green Chillies

3 tbsp Curry Powder

3 cup of Coconut Milk

1 cup of Tamarind Juice

1 sprig Curry leaves

2 tbsp Oil

Salt and Seasoning

Method:

1. Sliced shallots, garlic thinly. Quartered the tomatoes. Blend the curry powder with 1 small cup of water.

2. Wash the fish thoroughly, drain and set aside.

3. Fry the shallots and garlic in a pan with some oil until fragrant.

4. Add in curry paste, stir well until slightly burnt, then add in the curry leaves.

5. Add in 1 cup of coconut milk and let it boil.

6. Add in tomatoes, tamarind juice and ladies fingers and cook for 5 minutes.

7. Put in fish and let it boil for 15 minutes.

8. Pour in 2 cup of coconut milk and let it boil and boil for 5 minutes and switch off the fire, cover up and side aside for 5-10 minutes.

9. Serve.
