Malay Food Cooking Pattern
The basic pattern of Malay cooking lies
in the preparation of wet and dry spices used to flavor the dish.
The wet spices covers of shallots, young and old ginger, fresh garlic,
red & green chillies,
turmeric and are usually pounded in mortar, and pestle or "batu
lesong" if used in small amounts. The dry spices are fresh coriander,
coriander seed, cummin, aniseed, cloves, cinnamon stick, cardamom and
many more.
The mainstay of every meal is rice, a
generous, steaming helping of it, accompanied by a selection of "lauk"
of dishes, including fish, vegetables, poultry and sambal.
