Malay Fried Chicken with Sauce (Ayam Selera)

Ingredients: (Serves 6-8)

1 whole Chicken

8 cm piece Ginger

4 cloves Garlic

3 tbsp Vinegar

3 Red Chillies

Salt and Sugar

8 Lettuce Leaves

2 Cucumber

1 cup of Oil

Method:

1. Pound ginger finely.

2. Wash and dry the chicken, rub and season with pounded ginger and some salt.

3. Steam the chicken until the meat is tender. Remove it and fry with oil until the skin is crispy.

4. Chopped the chicken into pieces and set aside.

5. Pound garlic, ginger, chillies together. Mix with vinegar, salt and sugar with 1 cup of water. Stir well the sauce and set aside.

6. Put the fried chicken onto the lettuce leaves, serve with the sauce as a dip.
