Malay Grilled Chicken with Gravy (Ayam Percik) |

Ingredients: (Serves 6-8) 1 whole Chicken 6 cloves Garlic 8 Shallots 4 cm piece Ginger Salt to taste Method: 1. Wash and cut the chicken into half. Clean and drain it. 2. Pound garlic, shallots, ginger and salt finely. 3. Marinate the chicken with the pound ingredients and set for 30 minutes. Gravy Ingredients: 2 cup Coconut Milk or Skinny Milk 3 cm piece Ginger 20 Shallots 1 tsp Aniseed 1 slice Lime Method: 1. Pound shallots, ginger, aniseed until fine. Pour in coconut milk or skinny milk. Put all ingredients and milk into a heated pan, put in salt and sugar and cook with medium fire. 2. Squeeze in lime juice and stir until the gravy thickens. 3. Grill the chicken over coal fire. Sprinkle the gravy on to it. Dip the chicken onto the gravy on and off and set to coal fire again. Turn over the chicken over and over again. Repeat the chicken is cooked. |
