Malay Grilled Pomfret (Bawal Panggang)

Ingredients: (Serves 4-6)

1 Pomfret

1 whole grated coconut

8 Chili Padi

4 clove Garlic

8 Shallots

1 tsp Turmeric Powder

1 Banana Leaf or Aluminum foil

1 Turmeric Leaf

2 cm piece Ginger

1 stalk Lemon Grass

Method:

1. Clean pomfret, baste it, drain and put aside.

2. Blend chili padi, shallots, garlic, ginger, lemon grass, turmeric, and turmeric leaf together.

3. Add salt and the seasoning into the grated coconut.

4. Wash the banana leaf, dry it.

5. Stuff the blended ingredients into the fish. Use the remaining ingredients to cover the fish.

6. Sprinkle some coconut mixture on to the leaf and on to the fish.

7. Wrap around the fish with the banana leaf and set to grill over charcoal fire or electric grill.

8. Serve.
