Ingredients: (Serves 4-6) 1 piece of Shad (Wash and drain thoroughly, rub and seasoned with salt and turmeric powder) Half grated Coconut 5 Shallots 2 Clove Garlic 2 cm piece Ginger 1.5 tbsp Dried Shrimps 1 tbs Shrimp Paste 1 Stalk lemon grass Some amount of Oil enough for deep frying Quarter tsp Salt Method: 1. Ground shallots, garlic, ginger, grated coconut, dried shrimp, shrimp paste together until fine. 2. Sliced and pounded lemon grass finely. 3. Mix the grounded ingredients with pounded lemon grass and season with salt to taste. 4. Stuffed the ingredients into the fish. 5. Heat up the pan until the oil is boiling. Deep fry and flip over the fish until it is cooked at both side. 6. Serve hot. |
