Malay Mutton in Tomato Sauce (Daging Kambing Masak Merah) |

Ingredients: (Serves 4-6) 500 gram Mutton 8 Large Onions 4 cm piece Ginger 8 clove Garlic 6 Almonds 4 tbsp Curry Powder 10 Tomatoes 3 Cinnamon Stick 1 small tin Tomato Puree 1 cup Evaporated Milk 3 tbsp Corn Oil Salt and Sugar to taste Method: 1. Wash and cut the mutton into pieces. 2. Sliced onions and garlic thinly, pounded the ginger, skinned the almond, quartered tomato. 3. Pound some of the onions, shallots, garlic and almond until fine. Mix it with curry powder and add in some water. 4. Boil sliced onions, garlic, shallots, ginger into water. 5. Fry the pounded ingredient and mixture until fragrant with oil. Add in tomato puree and fry until fragrant. 6. Pour this mixture into the beef and stir well. 7. Add in tomato quarters and simmer until cooked. 8. Add in milk, salt and sugar, continue boiling until the gravy gets thick. 9. Serve while hot. |
