Ingredients: (Serves 4-6) 5 pieces Brinjals - Sliced uneven thin and thick 5 Shallots - sliced 1 Cloves Garlic - sliced 3 tbsp Curry Powder - blended with 2 tbsp Water 1.5 cups Think Coconut Milk 3 cups thin Coconut Milk 2 Spring Curry Leaves 2 pieces Asam Gelugur Salt to taste 4 tbsp Oil Method: 1. Fy shallots and garlic with oil until fragrant. 2. Pour in curry powder and fry with shallots and garlic until it smell well. 3. First add in thin coconut milk, asam gelugur and curry leaves. Continue to boil it. 4. Then add in brinjals and let it cook till tender. 5. Finally add in thick coconut milk and boil for another 20-30 minutes. 6. Serve hot with fragrant rice. |
