Malay Pomfret Chutney (Acar Ikan Bawal)

Ingredients: (Serves 4-6)

2 large size Pomfret

1 small bottle White Vinegar

2 small Cucumber

1 Carrot/Radish

1 Onion

1 tbsp Sesame seed

2 cm piece Ginger

3 Red Chillies

3 Green Chillies

4 Clove Garlic

8 Shallots

Mustard Seed

Some lime juice

1 tsp Salt & Sugar

Method:

1. Wash the fish and rub with turmeric powder and salt. Soak in oil and deep fry until half cooked.

2. Chop onion, garlic and shallots, soak in lime juice for 10 minutes.

3. Remove core of cucumber and carrot with sliced for 1 cm length wise. Sliced ginger thinly.

4. Stir fry onion, sesame seed and mustard seed until golden brown in color.

5. Pour in vinegar and 1 cup of hot water. Add in radish, sliced ginger and fried fish.

6. Once the radish is tender, add in cucumber and remove from fire.

7. Serve with garnish chillies.
