Malay Prawn Curry (Gulai Udang)

Ingredients: (Serves 6-8)

800 grams medium size Prawns

8 dried Chillies

3 Shallots

3 Clove Garlic

3 cm piece Ginger

1 spring Curry Leaves

1.5 tsp Turmeric Powder

1.5 tsp Coriander Seeds

1 tsp Cummin

3 cup Coconut Milk or Skinny Milk

5 tbsp Oil

1 Lime

Quarter tsp Salt

Method:

1. Ground shallots, garlic, ginger together until fine.

2. Fry the curry leaves for 2-4 minutes with some oil until it is roasted.

3. Put in grounded ingredients and fry for 5-10 minutes until golden brown in color and fragrant with constant stirring.

4. Put in spices and fry for 2 minutes.

5. Put in coconut milk or skinny milk and simmer for 15 minutes under low flame.

6. Squeeze in lime juice and switch off the flame, set aside with pot covered up for 5 minutes.

7. Serve hot.
