Malay Prawns Cooked with Tempoyak

(Udang Masak dengan Tempoyak)

Ingredients: (Serves 6-8)

800 grams medium size Prawns

3 cups Coconut Milk or Skinny Milk

1 cup Tempoyak (fermented durian flesh)

3 Turmeric Leaves

8 Chili Padi

4 cm piece Turmeric

5 clove Garlic

Quarter tsp Salt

Method:

1. Wash the prawn, shelled and remove its intestines.

2. Ground chili padi, turmeric, garlic together until fine.

3. Put grounded ingredients, prawns, tempoyak and 1 cup of coconut milk into a pot.

4. Stir well to get the tempoyak dissolve and mix well over a low flame for 5 minutes.

5. Add in coconut milk, turmeric leaves and season with salt to taste.

6. Continue cooking until turmeric leaves are limp.

7. Serve while it is hot.
