Malay Prawns in Spicy Gravy (Sambal Tumis Udang)

Ingredients: (Serves 6-8)

1 kg medium size Prawns

6 clove Garlic

2 stalks Lemon Grass

8 Shallots

2 cm piece Ginger

2 cm piece Turmeric

2 Bombay Onion

4 tbsp ground Chillies

1 tbsp Shrimp Paste

Some tamarind juice

Method:

1. Shelled prawns and remove its intestine.

2. Crushed lemon grass. Sliced Bombay onion thickly.

3. Blend shallots, ginger, garlic, turmeric and shrimp paste together until fine. Add in ground chillies.

4. Fry the pounded ingredients until fragrant, then add in Bombay onion and lemon grass.

5. Add in tamarind juice, sugar, and salt to season.

6. Put in the prawns at last and cook for 10-15 minutes until well cooked.

7. Serve while hot.
