Malay Salted Fish Curry (Kari Ikan Kering)

Ingredients: (Serves 4-6)

5 pieces Salted Fish

5 Potatoes

2 Brinjal

4 Tomatoes

5 Shallots

2 tbsp curry powder

2 cup Coconut Milk

2 Sprig Curry Leaves

2 tbsp Tamarind Juice

2 tbsp Oil

Salt and Seasoning

Method:

1. Peeled and quartered the potatoes. Rinse and boil to half cooked.

2. Rinse and cut tomatoes into halves.

3. Wash and cut brinjal into lengthwise.

4. Sliced the shallots thinly.

5. Blended the curry powder with half small cup of water.

6. Heat up a pan with some oil, fry shallots until golden brown color. Add in the curry powder and fry until fragrant.

7. Pour in some more water and salt continue for boiling.

8. Put in the half cooked potatoes and cook until tender.

9. Add in coconut milk and salted fish pieces continue boiling for another 15 minutes.

10. Add in the brinjal and cover up the pan for another 10 minutes. And serve.
