Ingredients: (Serves 6-8) 1 whole Chicken 20 Dried Chillies 3 cup grated Coconut 4 cup Coconut Milk 3 stalk Lemon Grass 2 Turmeric Leaf 2 piece dried Tamarind 4 cm piece galangal 2 large Onion 4 cm piece Ginger 1.5 tbsp Black Pepper 1 tsp Turmeric Powder 1 tsp Aniseed and Cummin Mixed Method: 1. De-boned the chicken and minced the flesh finely. 2. Grated onion, ginger, and galangal. Pounded the grated coconut and fry with some oil till brown in color. 3. Put in the grounded chillies, grated onion, ginger, galangal into a pan with some oil. Add in the coconut milk and chicken minced, set to boil. 4. Put in tamarind, black pepper, spices, lemon grass, pounded coconut. Continue to cook with low fire. 5. When the gravy get thickens and almost dry, put in a dash of salt and serve. |
