Malay Spicy Chicken (Ayam Berempah)

Ingredients: (Serves 6-8)

1 whole Chicken

3 tbsp Aniseed

1 tsp Cummin

8 Cardamons

2 cm piece Ginger

3 cm piece dried Turmeric

2 clove Garlic

6 Red Chillies

2 stalk Lemon Grass

3 tsp Coriander

1 tsp Black Pepper

8 Cloves

8 cm piece Galangal

20 Shallots

4 Bombay Onions

4 Slices Dried Sour Fruit

5 cup of Coconut Milk or Skinny Milk

1 tbsp Shrimp Paste

Method:

1. Cut onion into 4 and cut chillies into lengthwise.

2. Toast all ingredients except red chillies, lemon grass. Pound all finely.

3. Wash and cut the chicken into 8 pieces.

4. Put the chicken into a pot and pour in coconut milk or skinny milk, set to boil with medium fire.

5. Add in pounded ingredients and bring to boil.

6. Put in crush lemon grass, red chillies, bombay onion and salt to taste.

7. Simmer the gravy until chicken is tender and serve when the gravy get thickens.
