Ingredients: (Serves 6-8) 2 tbsp Raisins 3 Preserved Limes 3 Red Chilies with deseeded 2.5 tbsp Cloves 2.5 tbsp Aniseed 2.5 tbsp Cardamom 2.5 tbsp Cummin 6 Cloves Garlic 2 Cucumber - sliced 1.5 tbsp Granulated Sugar 8 Prunes 4 Dried Preserved Mangoes 3 Green Chillies - deseeded 25 Shallots 1.5 bowl thick coconut milk - extracted from 1 coconut 1.5 Piece Carrot - sliced Some Cooking Oil 1 tsp Salt Method: 1. Put all raisins, prunes, preserved limes and mangoes in a bowl, and mix around well. 2. Put cucumber, carrot, red chillies and green chillies in another bowl, mix them well and then add them to the mixed fruit. 3. Blend 15 shallots and 6 cloves garlic. Add the remainder of the shallots to the other ingredients. 4. Fry the freshly ground spices and also the pounded shallots and garlic in a heater up pan. 5. Pour in half a bowl of the coconut milk and stir until the milk it is cooked. 6. When the gravy boils, add in the remainder of the coconut milk. 7. Add in 2 tbsp of Sugar and Salt to taste. . 8. Store chutney in a bottle when it is cooled and store in a cool and dry place. |
