Ingredients: (Serves 6-8) 1 Whole Chicken 10 Shallots 3 Clove Garlic 2 Stalk Lemon Grass 4 cm piece Galangal 3 cm piece Fresh Turmeric 2 tbsp Coriander Seeds 1 tsp Cummin and Aniseed Salt and Sugar Method: 1. Wash and dry the chicken, cut into small pieces. 2. Grind shallots, garlic, lemon grass, galangal, turmeric, coriander seeds, cummin and aniseed together finely. Rub the grounded ingredients over the chicken. Season for 30 minutes. 3. Put the seasoned chicken into a pot with add in 1 cup of water and cook over medium fire until 50% cooked. 4. Remove the chicken and put into a deep pan for deep frying. Fry until it is golden in color. 5. Serve with lettuce leaves and tomatoes aside. |
