Malay Steamed Chicken (Ayam Kukus)

Ingredients: (Serves 6-8)

1 whole Chicken

3 cm piece fresh Turmeric

2 cm piece Ginger

2 cm piece galangal

2 stalk Lemon Grass

3 tsp Coriander Seeds

2 tsp Cummin

4 Cloves Garlic

8 Shallots

1 tsp Sugar

Salt to taste

Method:

1. Wash and cut the chicken into 4 pieces. Wash and drain.

2. Grind turmeric, ginger, lemon grass, coriander seeds, cummin, shallots and garlic finely.

3. Rub grounded ingredients and galangal on to the chicken. Set aside for 30 minutes to season.

4. Put the seasoned chicken into a steaming tray and steam until the chicken is tender.
