Malay Steamed Stuffed White Fish (Ikan Sumbat Kukus)

Ingredients: (Serves 6-8)

6 Whit Fish (Tuna or Threadfin)

3 cm piece Ginger

2 tbsp of Galangal

4 stalks of Mint Leaves

4 Red Chillies

1 tsp Salt

1.5 tsp Cummin

1 cup Tamarind Juice

12 Shallots

Grated and pounded half Coconut

1 cup of Coconut Milk

4 stalks Lemon Grass

1.5 tsp Black Pepper

1 tsp Coriander Sees

1 tsp Aniseed

Method:

1. Wash the fish, remove the flesh with the skin intact cafefully.

2. Pound the shallots, ginger, lemon grass, galangal, black pepper, salt, coriander, aniseed, cummin, and red chillies until fine.

3. Stuff pounded ingredients with grated coconut into the fish skin and put into a deep bowl.

4. Pour in 1 cup of coconut milk and steam for 30 minutes.

5. Serve.
