Malay Stuffed Fish (Ikan Sumbat Goreng)

Ingredients: (Serves 6-8)

2 piece White Fish

3 tbsp Turmeric powder

3 cloves Garlic

1 stalk Lemon Grass

2 cup dried Coconut flesh

3 tbsp Coconut Milk

3 Red Chillies

1 tsp White Pepper

1 cup tamarind juice

2 piece of Shallots

Proper portion of Oil

Turmeric Leaves for wrapping

Method:

1. Wash and dry the fish aside. Marinate fish with salt, turmeric powder.

2. Grind chillies, garlic, lemon grass, turmeric and dried coconut flesh finely.

3. Slice shallots and garlic thinly. Mix with the grinded ingredients.

4. Add in tamarind juice, white pepper, and salt.

5. Stuff the dried coconut flesh into the fish from the mouth opening.

6. Sprinkle some coconut milk on top of the fish, wrap it with turmeric leaf, then tie it with thread to avoid the filling burst out during the cooking process.

7. Heat up a pan and pour in some oil, put in the fish and fry it until golden brown in color and flip over and continue until the fish is well cooked.
