Ingredients: (Serves 4-6) 400 gram Ladies' Fingers 2 piece Mackerel 4 cups of Coconut Milk 3 Fresh Red Chillies 5 Dried Chillies 2 Stalks Lemon Grass 2 cm piece galangal 2 Candlenuts 3 Clove Garlic 8 Shallots 2 tbsp Shrimp Paste 4 tbsp Oil Method: 1. Ground fresh red chillies, dried chillies, lemon grass, galangal, candlenuts, garlic, shallots and shrimp paste together. 2. Clean ladies' finger and cut in the middle in one side. 3. Minced the mackerel. 4. Stuff minced mackerel into ladies' fingers. Put all on the plate and pour some oil on top of them. 5. Steam them for while to get half cooked. 6. Fry the ground ingredients with oil in hot pan until you can smell the aroma fragrant. 7. Put in coconut milk and stir well until boiled. 8. Pour in the ladies' fingers and continue boiling, add some salt and remove to serve. |
