Malay Tamarind Beef (Beef Daging Asam) |

Ingredients: (Serves 4-6) 500 grams Topside Steak 8 Dried Chilies 10 Shallots 5 cm piece Ginger 4 Candlenuts 2 tsp dried Shrimp Paste 1 tsp Turmeric Powder 3 tbsp Oil 2 cup Water 2 tbsp Tamarind Juice Sugar and Salt to taste 2 fresh Red Chillies 2 Green Chillies Method: 1. Wash and cut the beef steak into small pieces. 2. Sliced red and green chillies finely. 3. Mince dried chillies, ginger, shallots. Ground with candlenuts, dried shrimp paste and turmeric into paste. 4. Fry the seasonings with some oil for 5-10 minutes and stir constantly. 5. Add in beef, stir and turn several times to coat the beef thoroughly with the seasonings. 7. Fry it until well-done. 8. Pour the tamarind juice on to the meat. 9. Add in sugar and salt and bring to boil. Switch to lower flame and simmer until the beef is very tender with gravy slightly thickens. 10. Remove beef and place on the plate, pour on some gravy. 11. Garnished with red and green chillies and serve. |
