Malay Traveler's Rice (Nasi Dagang)

Ingredients: (Serves 6-8)

4 kg Siamese Rice

1 kg Glutinous Rice

10 cup of Coconut Milk

30 Shallots

1.5 tbsp Fenugreek Seeds

10 cm Piece Ginger

1 tsp Salt

Method:

1. Wash and soak the Siamese and Glutinous rice for 7 hours, or overnight.

2. Slice shallots and gingers thinly.

3. Steam the rice over hot boiling water until it is half cooked.

4. Pour in the coconut milk, salt and steam again until the coconut milk is fully absorbed by the rice.

5. Add in sliced shallots, gingers, and fenugreek seeds and mix it thoroughly with the rice.

6. Serve with any flavor curries, but best go with Tunny Curry.
