Malay Yellow Rice (Nasi Kunyit) |

Ingredients: (Serves 4-6) 5 cm piece Turmeric 500 gram Glutinous Rice 2 piece Asam Gelugur 15 piece Peppercorns 3 Screwpine Leaves 2 cup Thick Coconut Milk 1 tsp Salt Method: 1. Wash turmeric and finely pound. Wrap and tie up firmly with muslin cloth. 2. Wash the rice, soak in water with turmeric pack and tamarind for about 3 hours, if possible soak it overnight. 3. Rinse the soak rice with running water, drain and set aside. 4. Steam the rice with peppercorns and screwpine leaves for 30 minutes. 5. When the rice is cooked, put it into a large bowl and pour in thick coconut milk. Soak for 20 minutes. 6. Put the rice back to steamer and continue to steam for another 15 minutes. 7. Serve the rice with any flavor of curries. |
