Authentic Birthday Noodles

Ingredients: (Serves 6-8)

800 gram Noodles

400 gram Streaky Pork

500 gram Prawns

400 gram Bean Sprouts with tail removed and blanched

4 Stalks of Chinese Chives

500 gram Chicken frames

4 Shallots

2 Egg beaten

1 tsp Salt

6 clove Garlic

2 tsp Thick Soy Sauce

2 tsp Thin Soy Sauce

4 tbsp Oil

Method:

1. Scald and drain the noodles.

2. Cut the streaky pork into small strips.

3. Boil the chicken frames with 3 little of water to get the stock.

4. Chop and fry the shallots and garlic.

5. Heat up a pan with some oil, add in garlic to fry until golden brown.

6. Add in prawns and port to fry until cooked. Set aside.

7. Boil the stock and add some salt to taste. Add in thick and think soy sauce.

8. Make a thin omelet on heated pan with some oil. Shred the omelet.

9. Divide the noodles into appropriate portion in each bowl. Top with some chives, bean sprouts, pork, prawns, shredded omlete, and fried shallots.

10. Pour in the boiling stock all over the noodles and toppings. Serve while hot. Can go with fresh cut chillies in soy sauce or sambal.
