Authentic Chicken in Red Sauce

Ingredients: (Serves 6-8)

1 whole Chicken

30 Red Chillies

2 cups Coconut Milk

1 tbsp roasted Shrimp Paste

2 tsp Tamarind

Salt and Sugar to taste

1 cup Oil

Method:

1. Wash and cut the chicken into quarter. Rub salt the chicken and season for 15 minutes.

2. Set up charcoal fire and grill the seasoned chicken until cooked.

3. Boil the red chillies, remove the seeds. Add in shrimp paste and tamarind to pound together.

4. Heat up a pan with some oil, fry the pounded ingredients, salt and coconut milk. Simmer for 20 minutes until the gravy get thickens.

5. Add in sugar to taste.

6. Pour over the gravy over the grilled chicken and serve hot.
