Authentic Peranakan Otak-Otak (Spicy Fish Cake) |

Ingredients: (Serves 4-6) 400 gram White Fish meat 400 gram Fresh Prawn 5 Shallots 3 Eggs slightly beaten 3 cup Coconut Milk 2 tbsp Sugar 1 tsp Salt 5 Turmeric Leaves 5 Lime Leaves 10 tbsp water + 1 tsp salt - mixed well 30 pieces Banana Leaves - 15 cm x 7 cm in size Special Gravy Making Ingredients to pound together finely: 8 cm Turmeric 3 tbsp Chili Powder 4 deseeded Red Chillies 12 slices Galangal 8 Candlenuts 4 Stalks sliced Lemon Grass 4 Cloves Garlics 12 Shallots 2 tbsp Shrimp Paste กก Method: 1. Wash the fish and cut into thin small slices. Chop prawns into small pieces. Mince and mix fish and prawns finely. Add in water and salt to mix well. 2. Add in the pound ingredients, chopped shallots, eggs and mix well. 3. Add in coconut milk, sugar, salt, turmeric and lime leaves, mix well. 4. Spread the mixture on to the banana leaves, wrap up well and fixed both end with toothpicks. 5. Set up fire on charcoal and grill it over with medium fire for about 10-15 minutes. Flip over on and off to get it well cooked for all sides. 6. Serve while hot. |
