Authentic Sour Fish Soup |

Ingredients: (Serves 4-6) 500 gram White Fish 30 gram Galangal 4 stalks Lemon Grass 8 fresh Red Chillies 30 gram Ginger 3 Galangal Leaves 3 Lime Leaves 2 Turmeric Leaves 15 gram Mint Leaves 6 Limes with juice extracted Salt and Sugar to taste Method: 1. Wash and cut the white fish into medium size. 2. Crush galangal, lemon grass, red chillies, and ginger together finely. 3. Chop galangal leaves, turmeric leaves, and lime leaves together finely. 4. Put all crushed ingredients into a pan and cover up with some water just above the ingredients. 5. Set to boil and simmer for 20 minutes. 6. Put in the salt and sugar, lime juice, fish pieces and the chopped leaves. Cook with low flame for 10 minutes. 7. If the soup get thickens, add in some if you like clearer soup. 8. Serve with fragrant steam rice and curry or sambal shrimp paste. |
