Authentic Yellow Glutinous Rice

Ingredients: (Serves 4-6)

500 gram Glutinous Rice

2 tbsp fresh Turmeric

1 tbsp Lemon Juice

6 cup Coconut Milk

Boiling Water

2 Banana Leaves

6 screwpine leaves

Method:

1. Wash and drain the rice.

2. Wash the screwpine leave and tie a knot in middle.

3. Ground fresh turmeric.

4. Put the glutinous rice in a pot, add in ground turmeric, lemon juice and water to about 5 cm above the rice. Soak overnight. Drain the water off and set aside.

5. Lay the banana leaves on to the tray of the steamer. Make holes on the banana leaves that the steam can get through.

6. Place the glutinous rice on to the banana leaves and cover the rice with screwpine leaves. Steam for 25 minutes over boiling water.

7. Put the steamed rice into a bowl and add in 3 cup coconut milk.

8. Stir well and cover up to steam for another 15 minutes.

9. When the rice is almost done, add in another 3 cup of coconut milk and stir well.

10. Continue steaming until the rice is fully cooked.

11. Serve the rice with any type of curry.
