Nyonya Chicken Pongteh

Ingredients: (Serves 6-8)

1 whole Chicken

3 medium Potatoes

12 small Red Onions

5 pips Garlic

3 tbsp Preserve Soy Bean Paste

2 cup Hot Water

1 tbsp Sugar

3 tsp Thick Soy Sauce

1 cup Oil

Method:

1. Wash and cut the chicken into bite-sized pieces.

2. Wash and cut the potatoes into wedges.

3. Pound garlic and onions finely, add in soy bean paste and mash it well.

4. Heat up a pan with oil. Fry the potatoes wedges until brown color. Drain and left quarter oil portion in the pan.

5. Put in pounded paste and stir fry until fragrant. Put in chicken pieces for another 10 minutes.

6. Add in 2 cup water, sugar and thick soy sauce and set to boil. Switch to lower flame and continue to cook until the chicken is tender.

7. Add in potatoes wedges, and salt to taste. Serve.
