Nyonya Chicken Sioh

Ingredients: (Serves 6-8)

1 large whole Chicken

15 Shallots

2 tsp Pepper

2 tbsp Thick Soy Sauce

1 tbsp Salt

12 tbsp Sugar

4 tbsp roasted Coriander Powder

300 gram Tamarind Water

2 tbsp Salt mix with Water

Method:

1. Wash and cut the chicken into 4 pieces. Rub with salt and set aside for 15 minutes. Wash and drain.

2. Pound shallots finely.

3. Combine coriander powder, sugar, salt, soy sauce, pepper and shallots with tamarind water and stir well.

4. Add chicken into mixture and cover up leave overnight.

5. Boil the marinated chicken for 25 minutes over medium heat.

6. Flip the chicken over and boil for another 25 minutes.

7. Remove from heat and serve.
