Nyonya Coriander Duck (Ark Siew)

Ingredients: (Serves 4-6)

1 whole Duck

4 tbsp Coriander

4 tbsp Sugar

1 cup Tamarind Juice

8 Shallots

1 tbsp Black Peppercorns

Salt to taste

Oil for Deep Frying

Method:

1. Clean the duck and rub over with salt. Season for 30 minutes. Cut into pieces.

2. Heat a pan, dry fry coriander. Set aside.

3. Pound fried coriander, black peppercorns and shallots together finely.

4. Heat up the pan with some oil, fry the seasoned duck until golden brown at the both side.

5. Remove the duck, drain the oil and put inside a pot.

6. Mix all ingredients thoroughly and pour over the duck.

7. Cook with low flame until the gravy is thicken and almost dry, which the duck is cooked thoroughly. Serve.
