Nyonya Curry Chicken |

Ingredients: (Serves 6-8) 1 large Chicken 500 gram peeled and boiled Potatoes 10 tbsp Curry Powder mix with 8 tbsp Water 4 cup Water 4 cup thick Coconut Milk 10 cloves Garlic 10 Shallots 4 cm piece Ginger Salt to taste 7 tbsp Oil Method: 1. Wash and cut the chicken into 20-25 pieces, set feet and neck aside. 2. Pound ginger, garlic, shallots together finely. 3. Mix half of the pounded ingredients with curry powder mixture. Rub over the mixture all over the chicken pieces. Season for 30 minutes. 4. Heat up a pan with some oil and fry the remaining curry powder mixture until smell fragrant. 5. Put in the seasoned chicken pieces and stir constantly for 20 minutes. 6. Pour in coconut milk and bring to boil. Add in some salt to taste. 7. Switch to lower flame, cover up the pot and simmer for 30 minutes. 8. Add in the cooked potatoes and continue cook for another 15 minutes until chicken is tender. 9. Serve with fragrant rice. |
