Nyonya Curry Fish Head

Ingredients: (Serves 4-6)

1 Fish Head (about 1 kilo gram)

150 gram Shallots

8 cloves Garlic

4 cm piece Turmeric

2 bunch Sweet Basil leaves

2 tbsp Shrimp Paste

12 dried Chillies

3 stalks Lemon Grass

1 cup Tamarind pulp mixed in 1 cup of water

4 Tomatoes cut in quarter

Salt to taste

1.5 cup Oil

Method:

1. Wash thoroughly the fish head, drain and set aside.

2. Ground shallots, garlic, turmeric, shrimp paste, dried chillies, lemon grass together finely set aside.

3. Heat up a pan with some oil and fry the ground ingredients until fragrant.

4. Add in tamarind water.

5. Add in the fish head, salt and set to boil. Simmer for 30 minutes.

6. Add in quartered tomatoes and sweet basil leaves. Set to boil again for another 10 minutes. Remove and Serve with fragrant rice.
