Nyonya Fresh Water Prawns in Curry |

Ingredients: (Serves 4-6) 18 Fresh Water Prawns 3 cups Coconut Milk 12 Dried Chillies 2 tsp Peppercorns 12 Shallots 2 tsp Coriander seeds 1 tsp Cummin 4 cm piece Turmeric 6 clove Garlic Salt to taste Half cup of Oil Some Mint leaves for garnishing Method: 1. Ground dried chillies, peppercorns, shallots, coriander seeds, cummin and turmeric together finely. 2. Wash and remove the intestine of the prawns. Shelled and cut the prawn at the front part (head till middle part of body). Leave lower part of the shell intact. 3. Heat up a pan with some oil and fry the ground ingredients until fragrant. 4. Pour in coconut milk and set to boil. 5. Add in prawns, add in some salt to taste and simmer until the gravy dry. 6. Dish out and serve with mint leaves as garnishing. |
