Nyonya Hot and Spicy Mackerel

Ingredients: (Serves 4-6)

2 piece Mackerel

20 Red Chillies

1.5 cups Shallots

3 stalks Lemon Grass

3 slices Galangal

1 tbsp Shrimp paste

2 cup Tamarind juice

3 sprigs Sweet Basil leaves

Salt to taste

Half cup Oil

Method:

1. Wash and cut the fish into small pieces. Season the fish with salt and set aside.

2. Ground red chillies, shallots, lemon grass, galangal, shrimp paste together finely.

3. Heat up an earthen pot with some oil. Fry the ground ingredients until fragrant.

4. Put in tamarind juice and basil leaves. Set to boil.

5. Turn down the flame and simmer for 5-10 minutes.

6. Put in fish pieces and cook until it is done.

7. Serve hot with fragrant rice.
